dc.description.abstract | The United States spends more money per capita on healthcare than any other developed country, yet ranks lowest in the ability to prevent and treat chronic disease. The nation's health experts attribute this status to Americans' unhealthy lifestyle factors resulting in obesity and metabolic dysfunction. Current health education interventions aim to change these lifestyle factors by shifting the macronutrient mix of the standard American diet, with the primary goal of achieving "desirable" body mass index (BNH) numbers. This paper proposes that the root cause of morbidity today is directly correlated with the industrialization of the food supply, resulting in Americans being overfed and undernourished regardless of their BMI. Trends in food preparation have changed radically over the last 50 years. Americans today consume more processed food per capita than any other developed nation while spending the least time on food preparation. This paper introduces a new paradigm in how to create sustainable health through an educational program that helps reconnect people with how to source, prepare, eat, and share whole and wholesome foods and how the sharing of food can build relationships and communities. The Hearth and Health education program is based upon the belief that sustainable health can be achieved by empowering participants to take control of their health and influence the food supply through the creation of self-efficacy, decreasing the influence of, and the dependency on, experts and other external influences | |
