Abstract
An increasing number of people are being diagnosed with celiac disease or gluten intolerance. The abundance of gluten-free products that are now being sold is a result of more and more people being diagnosed with this issue. Most people who are told that they need to eliminate gluten from their diet do just that without considering their overall dietary approach. However, eliminating gluten is not sufficient in itself to support health, and the standard American gluten-free diet is, in fact, unhealthy. While eliminating gluten is vital, it is only the first step in the healing process. In addition to a healthy, whole-food diet, other factors that are needed to support health are supplements, stress management, exercise, and further testing. Unfortunately this type of integrative approach to going gluten-free is not readily available. The workshop (Going Gluten-Free Healthfully) presented in this paper will educate people on how to live a healthy, gluten-free life, not just a gluten-free one. Attendees will feel accountable and empowered by learning through experientials, creating action plans, and lectures. By taking a whole-body approach, this workshop will address the attendees' emotional, physical, and social interrelated aspects of transitioning to a healthy gluten-free life.
