The author evaluates college students' dietary habits and shows that they can be improved significantly by promoting environmentally sustainable food choices. A working definition of "sustainable food choices" is provided, as well as an exploration of the health benefits of such choices, a summary of the basic principles of holistic education, and options how to modify existing models of nutritional interventions on campuses to include environmental issues.
