Abstract

Food provides us with essential nutrients and can also nourish us by enriching our family bonds, creating a nurturing environment, and connecting us to the people in our lives. It can bring about personal awareness of ourselves. Our sense of taste helps us choose food that nourishes the body, mind, and spirit. We naturally eat what tastes good to our palates, but what if we do not have educated palates and thus do not have a taste for what would really nourish us? If we can expand our palates, we can bring health into balance. Food preferences are created not only by tasting food but also by more deeply experiencing the environment in which they are eaten. If we look at how we can change our palate by taking a holistic approach, we can reshape our food preferences so that they become trustworthy guides to eating what best nourishes us.
